Jamaican Fruit Cake
Hello again guys. With
my teacher's supervision I learnt how to make a Jamaican Fruit Cake. The process
of making this cake was quite easy and I faced no difficulties. This was
also my first attempt and I must say I did pretty well this time around
but like I always say there is always room for improvement.
Ingredients
2 cups prunes
2 cups currants
2 cups raisins
1 cups cherries
8 cups red wine
1 cup white rum
1 lb or 4 Cups Chiffon Margarine (use
everything)
1 lb 4 Cups granulated sugar
8 medium eggs
1 lb or 4 Cups all purpose flour
2 tbsp baking powder
1 tbsp nutmeg
1/2 tsp mixed spice
1 tsp vanilla essence
3 tbsp Eve Browning
1 tsp rose water and almond essence
Method
1. Preheat oven to
150°C/300°F and grease and flour a baking tin and set aside.
2. Put fruits to soak in
red wine and rum some weeks before or even months before for maximum flavour.
Then cream the margarine and sugar until light and creamy. Beat in eggs one at
a time.
3. Sift together flour,
baking powder and spices, then add vanilla, rose water almond and browning to
fruit mixture.
4. Fold the dry
ingredients into the fruit mixture just until combined. Do not over mix.
5. Pour mixture into
your prepared greased baking tin. Add a pan with water in oven to keep the oven
moist and to prevent the cake from drying out. Bake for 1-2 hours until done,
or until a cake tester comes out clean. Allow to cool, slice and serve.
