Black Forest Cake
Hello again guys. With my teacher's supervision I
learnt how to make a Black Forest Cake. The taste and texture of this cake was to
die for literally. I’m not a fan of chocolate I’m more of a vanilla girl and
this had my hooked! This was again my first attempt in making this type of cake
and I got good reviews on the texture, taste, and how I presented it. But it
wasn’t all smooth sailing the marshmallow frosting gave me a hard time and when I was layering the cake it was a bit uneven but I held my composure and I pushed on. For
my first attempt I honestly can say I did really well but like I always say
there is always room for improvement.
Ingredients
2 cups sugar
1 3/4 cups all purpose flour
3/4 cup HERSHEY'S Cocoa
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla extract
1 cup boiling water
Method
1. Pre-heat oven to 350°F. Grease and flour two 9inch round baking pans
2. Stir together sugar, flour, cocoa, baking powder, baking soda and salt in large bowl. Add eggs, milk, oil and vanilla; beat on medium speed of mixer 2 minutes. Stir in boiling water (batter will be thin). Pour batter into prepared pans.
3. Bake 30 to 35 minutes or until wooden pick inserted in center comes out clean. Cool 10 minutes; remove from pans to wire racks. Cool completely.
How to make the cherry filling
7 oz (200 g) Cherries (7 oz)
¼ cups (50 g) White Sugar
1 tbsp Lemon Juice
1 tbsp cornstarch
½ cup (120 ml) Water (divided)
Method
1. Place cherries in a saucepan with the sugar,
lemon juice, and half the water (¼ cup).
2. Heat on low to medium
heat until sugar is dissolved. In a separate bowl, combine the remaining water
(¼ cup) with the cornstarch.
3. Mix well and add the cornstarch mixture to the cherries mixture. Continue to cook on low heat. Remove from heat when it is thick enough to coat the back of a wooden spoon or spatula and set aside to cool.
How to make the Marshmallow frosting
Ingredients
1 1/2 cup G sugar
1/4 tsp salt
1/2 tsp cream of tartar
1/2 cup water
2 tbsp corn syrup
2 egg whites
1 tsp vanilla
Method
1. Bring sugar, salt, cream of tartar, corn syrup to a rapid boil.
2. Whip egg whites to a stiff peak
3. Pour in boiled syrup in whipped egg whites in a steady stream
4. Add vanilla
How to assemble and layer the cake
Place one of the cake layers on your cake stand,
cake turntable, or serving plate. Spread a cup of the marshmallow frosting evenly
on top. Put the cherry filling on top. Place the 2nd cake layer and
evenly cover the top with a cup of the frosting and the cherry filling. Top
with the 3rd cake layer.
Spread the remaining marshmallow frosting on top using a palette knife to smooth
off the top of the cake and all around the sides in a thin layer using an icing
spatula.
Spoon reserved frosting into pastry
bag fitted with star decorator tip. Pipe the top and bottom edges of the cake.
Spoon the remaining cherry topping onto top of the cake.
